
The daughter of a successful Mexican restaurateur is set to bring the tastes of Central America to the senors and senoritas of Birkenhead this summer.
Mexican born Roxana Casaus, 32, and her partner Paul Kinney, 33, have launched the Sombrero Bar and Grill - a Mexican restaurant and coffee shop inspired by a family history of thriving Mexican establishments across the North West.
Roxana is the daughter of Victor Casaus, a retired restaurateur who moved to England 30 years-ago with his family to launch the renowned Liverpool and Manchester based Mexican restaurants, El Macho Bar and Grill.
Roxana said: “The restaurant business is defiantly in my blood along with Mexican food of course.
“I grew up, in and around my father’s famous restaurants and learnt the trade of Mexican hospitality first-hand.
“I’ve taken all the successful elements of my family’s previous establishments and added my own personal touches to make the Sombrero Bar and Grill one of the North West’s leading Mexican food destinations.”
The Sombrero Bar and Grill offers one of the area’s most extensive, authentic Mexican menus, exploring the intense and varied flavours of one of the world’s most popular cuisines.
The wide range of choice at the Sombrero Bar and Grill - from the large sizzling seafood skillets to fresh, corn tortilla chicken enchiladas - is set to appeal to all who dine.
Roxana continued: “We base our menus on the pride of home-cooked Mexican food.
“Ingredients such as our salsas and guacamole are prepared from scratch, the traditional Mexican way.
“To this day my family are still heavily involved. Currently my mother, who lives in Mexico, is hand making table cloths especially for the restaurant.
“It is these little authentic touches that will make The Sombrero Bar and Grill stand out from the crowd.”
